What's cooking!



I'm going to start keeping track of new recipes that I am trying and ones that I am perfecting!! I made my version of Chicken pot pie the other night! It's getting better each time I make it, and it's fun trying out different vegetable combinations and spices! This was the recipe I used

Ingredients

2lbs of boneless, skinless chicken breast
1 can of baby carrots
1 can of whole potatoes
1 1/2 c. of Broccoli ( frozen)
1 c. peas ( frozen)
1 can of cream of chicken soup
1 tsp of ground black pepper
salt to taste
1/2 tsp. onion powder
1/2 tsp. rosemary
1/2 tsp. garlic powder

1 tblspn. extra virgin olive oil
1 can of biscuits

preheat oven to 350

in large pan add spices to chicken ( cut into chunks) cook until white. remove chicken from pan, then add frozen vegetables and 1/2 c. water to lightly steam. Add canned veggies and soup +1 can of water, season with salt and pepper. pour Soup and veggies over chicken in large casserole dish, place biscuits on top and cook until biscuits are done. We've been enjoying this as a great dinner and then again for a lunch! Makes about 8 servings!!

April Showers..


This April has been a busy one! Starting off with Carter's second birthday! It was so much fun seeing him play with all of his friends and really seem to enjoy it. We had his party at World of Bounce, an inflatable house place. He was climbing and sliding all on his own! Last year he wasn't even walking at his birthday party. If you think about how much a little kid changes in a whole year it's mind blowing. I couldn't believe how independent he was! I loved watching his reaction to the presents, each being the thing he wanted to hold and play with at that moment... that is until he got a billion hot wheels from Poppy. For his birthday I made a lightening McQueen car and he LOVED it! He was actually kind of sad when we cut it up!!

Max has been growing and getting stronger everyday! He's looking around and holding his head up like a champ. He's starting to have more alert awake times and really seems to get excited to see us. It's adorable. He loves his big brother already, and watches his every move. I have a feeling this will continue forever!

It's amazing to think that I'm lucky enough to have a love like this and how so many people spend their whole life looking for it. I also remembered how much I miss singing.. so I'm going to do it more, even if it's just for me, that's something!
